- 1 large bunch kale, washed, stems removed, and chopped (about 4–6 cups)
- 2 cups fresh pineapple, cut into bite-sized chunks
- 1 English cucumber, diced or sliced into half-moons
- ½ red onion, thinly sliced
Lime Vinaigrette
- Juice of 1 lime (about 2 tablespoons)
- 1½ tablespoons extra-virgin olive oil
- 1 teaspoon honey
- ¼ teaspoon sea salt
- Freshly ground black pepper, to taste
Instructions
Step 1: Prepare the Kale
Place the chopped kale in a large mixing bowl. Add a small drizzle of olive oil and a pinch of salt. Using your hands, gently massage the kale for 2–3 minutes until the leaves become darker in color and slightly tender.
Step 2: Build the Salad
Add the pineapple, cucumber, and red onion to the bowl with the kale.
Step 3: Make the Dressing
In a small bowl or jar, whisk together the lime juice, olive oil, honey, sea salt, and black pepper until well combined.
Step 4: Toss and Rest
Pour the dressing over the salad and toss until evenly coated. Refrigerate for 10–15 minutes before serving to allow the flavors to blend.
