Prep Time: 15 minutes
Rest Time: 15 minutes
Total Time: 30 minutes
Servings: 4

Ingredients

Salad

  • 1 large bunch kale, washed, stems removed, and chopped (about 4–6 cups)
  • 2 cups fresh pineapple, cut into bite-sized chunks
  • 1 English cucumber, diced or sliced into half-moons
  • ½ red onion, thinly sliced

Lime Vinaigrette

  • Juice of 1 lime (about 2 tablespoons)
  • 1½ tablespoons extra-virgin olive oil
  • 1 teaspoon honey
  • ¼ teaspoon sea salt
  • Freshly ground black pepper, to taste

Instructions

Step 1: Prepare the Kale

Place the chopped kale in a large mixing bowl. Add a small drizzle of olive oil and a pinch of salt. Using your hands, gently massage the kale for 2–3 minutes until the leaves become darker in color and slightly tender.

Step 2: Build the Salad

Add the pineapple, cucumber, and red onion to the bowl with the kale.

Step 3: Make the Dressing

In a small bowl or jar, whisk together the lime juice, olive oil, honey, sea salt, and black pepper until well combined.

Step 4: Toss and Rest

Pour the dressing over the salad and toss until evenly coated. Refrigerate for 10–15 minutes before serving to allow the flavors to blend.

Notes

  • Fresh pineapple provides the best flavor and texture.
  • Massaging the kale helps soften the leaves and reduces bitterness.
  • The salad can be prepared a few hours in advance and stored in the refrigerator.
  • For a lighter onion flavor, reduce the red onion to ¼ onion.

Nutrition Highlights

This salad combines leafy greens, fresh fruit, and vegetables into a bright, nutrient-rich side dish that works well alongside grilled chicken, fish, sandwiches, or as a light lunch on its own.
