The Exactly Right Grandma Egg Noodles

What You Need
- 12 oz wide egg noodles
- ½ stick butter (4 tbsp minimum, 6 if you’re being honest)
- Salt (important)
- Optional: 2–3 tablespoons chicken broth or milk
How to Make Them
- Boil properly
- Big pot.
- Water salty like soup.
- Boil noodles until soft. Not mush. Soft.
- Usually 1–2 minutes past the package time.
- Drain gently
- Drain, but don’t rinse.
- Leave just a little moisture clinging to them.
- Butter while hot
- Put noodles back in the pot.
- Add butter immediately.
- Add broth or milk if using.
- Stir gently until glossy and relaxed.
- Salt last
- Taste first.
- Add salt until it wakes up.
- Pepper only if that feels right.
- Let them sit
- Cover the pot.
- Rest 5 minutes.
- This step matters more than people admit.
