Easy Four-Ingredient Blueberry Cobbler

This easy blueberry cobbler combines juicy blueberries with a buttery, lightly crisp topping. It requires only four basic ingredients and takes about 10 minutes to assemble.

Prep Time: 10 minutes
Rest Time: 20–30 minutes
Bake Time: 40–50 minutes
Servings: 6

Ingredients

  • 4 cups fresh blueberries
  • 1 cup self-rising flour
  • 3/4 cup granulated sugar, divided
  • 1/2 cup butter, divided and melted separately
  • 2 tablespoons granulated sugar for topping (optional)

Instructions

1. Prepare the Blueberries

Place the blueberries in a mixing bowl and gently toss them with 1/4 cup of the sugar.

Allow the blueberries to rest for 20–30 minutes, stirring occasionally, until they begin releasing their juice.

2. Prepare the Topping

Preheat the oven to 350°F.

In a medium mixing bowl, coarsely combine the self-rising flour, remaining 1/2 cup sugar, and 1/4 cup melted butter. The mixture should have a loose, crumbly texture.

3. Assemble the Cobbler

Sprinkle approximately one-third of the flour mixture across the bottom of a 9 × 9-inch baking dish.

Add the blueberries and any juice they have released.

Sprinkle the remaining flour mixture evenly over the blueberries. Add the optional 2 tablespoons of sugar for a sweeter, crispier topping.

Drizzle the remaining 1/4 cup melted butter evenly over the top.

4. Bake

Bake for 40–50 minutes, or until the blueberries are bubbling and the topping is golden brown.

Allow the cobbler to rest for at least 10 minutes before serving. The filling will continue to thicken as it cools.

Serve warm with vanilla ice cream.

Self-Rising Flour Substitute

If you do not have self-rising flour, combine:

  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt

Using Frozen Blueberries

Frozen blueberries may be used without thawing. Skip the resting period and add approximately 5–10 minutes to the baking time.

Storage

Cover and refrigerate leftover cobbler for up to 3 days. Reheat individual servings in the oven or enjoy them cold.
