Red Potatoes with Butterkäse Cheese Pockets

A simple baked potato with a molten, buttery center

This version of baked red potatoes came together at the suggestion of my daughter, who wanted to try something simple and hands-on. Instead of scooping and mixing, the approach was to dig a small pocket into the center of each potato and fill it directly with Butterkäse cheese. The result is a rustic, low-fuss baked potato with a molten, buttery center — minimal steps, but deeply satisfying.


Ingredients (serves 2)

  • 2 large red potatoes
  • 1–2 tablespoons olive oil
  • Kosher salt
  • ½–¾ cup Butterkäse cheese, grated or finely chopped
  • Freshly ground black pepper
  • Optional: a small pat of butter

Instructions

1. Bake the potatoes

Preheat oven to 425°F (220°C).

Scrub the red potatoes clean and dry thoroughly. Pierce each potato several times with a fork. Rub lightly with olive oil and season generously with kosher salt.

Place the potatoes directly on the oven rack or on a rack set over a baking sheet. Bake for 45–55 minutes, until the skins are lightly crisp and a knife slides easily into the center.


2. Create the cheese pocket

Remove the potatoes from the oven. Using a knife, make a lengthwise slit across the top of each potato.

Gently open the potato just enough to access the center. With a spoon, dig a small cavity in the middle — not wide, just deep enough to hold the cheese. The potato should remain mostly intact.


3. Stuff with Butterkäse

Fill the cavity generously with Butterkäse. Add a small pat of butter if desired and season lightly with black pepper.

Gently press the potato closed so the cheese is enclosed by the hot interior.


4. Melt and finish

Return the potatoes to the oven at 400°F for 5–8 minutes, just long enough for the cheese to melt fully inside.

Remove and serve immediately.
