Baked Buffalo Cauliflower Bites (Easy Oven Method)
October 2, 2025 / /
Buffalo wings are a classic, but sometimes you want the flavor without the heavy fried chicken. That’s where these oven-baked buffalo cauliflower bites come in. They’re spicy, tangy, and surprisingly satisfying — perfect for game day, a party spread, or even just a snack when the craving hits.
The trick is simple: toss cauliflower florets in a buttery hot sauce mix, roast them at high heat until caramelized, and serve immediately. You’ll get that signature buffalo kick with a lighter twist.
Ingredients
- 1 large head of cauliflower, cut into small florets
- ½ cup Frank’s RedHot Sauce (plus extra for serving)
- 2 tablespoons butter, melted
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- ½ teaspoon garlic powder
- 1 teaspoon salt
- Freshly ground black pepper (optional)
Instructions
- Prep the oven → Preheat to 425°F. Line a large baking sheet with parchment paper.
- Mix the sauce → In a bowl, whisk together hot sauce, melted butter, olive oil, lemon juice, garlic powder, and salt.
- Coat the cauliflower → Place the florets in a large bowl and toss with the hot sauce mixture until fully coated.
- Roast → Spread cauliflower in a single layer on the baking sheet. Bake 25–30 minutes, tossing halfway, until fork-tender and browned on the edges.
- Finish & serve → Optional: broil for the last 2 minutes for extra crisp edges. Season with black pepper. Serve hot with extra buffalo sauce (or ranch/blue cheese dip).
Notes from My Kitchen
- Extra crispy option: Roast cauliflower tossed just in olive oil first, then add the hot sauce after baking. Some people swear by this method for less soggy bites.
- Best served fresh: These are tastiest right out of the oven.
- Make it your own: Try swapping Frank’s for another hot sauce if you like a different heat profile.
✅ Why it works: High oven heat gives you that roasted caramelization, while the butter + hot sauce combo delivers classic buffalo flavor without the fryer.
